I loved reading this post by Vegan Cowgirl: A Vegan in Budapest.
I went to Budapest about 6 years ago (back when I was a vegetarian, not a vegan) and had a wonderful weekend there myself. I also had a good friend living there, and it really does make it so nie when you can hang out with someone who is, if not a native, a resident who knows places of the tourist track.
Budapest was exactly what I imagined Europe would be when I first went there...cobblestone streets and beautiful old buildings. I had a hotel room that overlooked the Danube, the Chain Bridge and the castle on the hill. Couldn't have been more spectacular. At the same time there were some Soviet-era block buildings that still had unpatched bullet strafing marks fro the 56 uprising. So, fascinating in more than one dimension.
And the food and the service was terrific. I never went hungry, and I never felt like I was putting anyone out by asking what was in various dishes.
I don't remember anymore exactly what I ate and where, but I do remember loving it.
Glad to hear from Vegan Cowgirl that I'd be just as happy there in my newer vegan state :)
