Day 588 (Y2/D223): One of those days when chopping seemed too hard
Got home from work around 8PM last night and just didn't feel like chopping vegetables. What is that about? It's not like I didn't pull out a pan and stir-fry up some seitan and garlic and corn. It's not like I didn't peel a potato. I just didn't feel like chopping up the tomatoes and/or celery and/or asparagus and/or leeks I had in the fridge.
It's a mental block to not want to touch my fancy new knife block that i got as a wedding gift when I'm tired.
Two choices: Buy pre-chopped veggies, which are hella expensive, or just get over it!!
Breakfast:
Organic Banana
Soy Latte
Vegan Scone
Lunch:
Diet Coke
Burrito with Black Beans, Rice, Salsa, Guacamole
Tortilla Chips and Salsa Verde
Snack:
Soy Pudding
Dinner:
Seitan, "Steak" Strips and Corn sauteed in Olive Oil and Garlic with Nutritional Yeast and Tofutti "Sour Cream" (Really, adding just a spoonful of this to just about anything you're mixing up adds some tang and some richness.)
