Day 251: Using all those veggies
So, I cancelled our last OrganicExpress order because we were going to be out of town, and when we got back in town I went shopping. Somehow I screwed up with Organic Express and scheduled the next delivery for just one week from the weekend we were out, as opposed to two weeks. thus I had just bought fruits and veggies live and in person when a box full of them showed up at my door.
So, I've been trying not to let them go to waste by being a bit more creative than I usually am. Like throwing Cauliflower into my typical Setian-Mushroom Stews, and by mixxing the Trader Joe's eggless Egg Salad with fresh Celery.And by (gasp!) actually making a big salad. Will wonders never cease?

Trader Joe's Eggless Egg Salad, mixed with Nayonnaise and Celery

Stew with: Morningstar Farms "Chikn" Strips, Organic Peas, Roasted Corn, Olive Oil, Garlic, Nutritional Yeast, Rice Milk, Soy Sauce, Organic Cauliflower
Salad with: Organic Greens, Organic Carrots, Organic Cucumber, Organic Avocado, Organic Tomatoes
Soy "Ranch" Dressing
